Ingredients:
● ⅔ cup butter, softened
● ⅔ cup shortening
● 1 cup brown sugar
● 1 cup white sugar
● 2 eggs
● 1 tbsp vanilla
● 2 ½ cups all purpose flour
● 1 cup cricket powder
● 1 tsp baking soda
● 1 tsp salt
● 2 cups chocolate chips
● 1 cup chopped walnuts (optional)
Directions:
1. Preheat oven to 375 F. Line baking sheets with parchment paper.
2. Cream together butter, shortening, and sugars. Add eggs and vanilla. Stir until just blended.
3. In a separate bowl, mix together flour, cricket powder, baking soda, and salt. Slowly add to wet ingredients, about ½ cup at a time. Add chocolate chips and nuts.
4. Form dough into 1” balls and chill slightly.
5. Place 12-13 dough balls on each cookie sheet. Bake 8-10 minutes. Let cool slightly on the warm pan for at least 1 min before removing. Cool completely on a wire rack.
6. If not consumed within a couple days, cricket cookies should be kept in the fridge.
